Waaaaay back in 2006, brothers Chris and Jeremy Cox, co-owners of JC’s Bar & Grill in downtown Bend, made a decision to brew their own beer. They launched the Wildfire Brewing Company in 2007 and renamed it 10 Barrel — after the small craft-brewing system — in early 2009. Then they took over a former west-side bakery, gave it a complete overhaul and opened an old-school neighborhood pub in February 2010. Gourmet pizzas, made from scratch, are best eaten while huddled around the fire pit at the heart of a broad outdoor patio, along with any great beer from brewmaster Jimmy Seifrit and senior brewer Dan Olsen.
